Honey Lime Chicken Enchiladas
A quick, flavorful enchilada recipe made easier with canned chicken and pantry staples!
Ingredients
- 2 cans (12.5 oz. each) canned chicken, drained
- 8 flour or corn tortillas
- 1 cup shredded Mexican-blend cheese, divided
- ½ cup sour cream
- ¼ cup honey
- ¼ cup lime juice
- 1 teaspoon chili powder
- ½ teaspoon garlic powder
- ½ teaspoon cumin
- 1 can (10 oz.) green enchilada sauce
- Salt and pepper, to taste
Directions
- Preheat oven to 375°F. Lightly grease a 9x13-inch baking dish.
- In a bowl, combine the canned chicken, sour cream, honey, lime juice, chili powder, garlic powder, cumin, and half of the shredded cheese. Season with salt and pepper.
- Spoon the chicken mixture into each tortilla and roll tightly. Place seam-side down in the baking dish.
- Pour the green enchilada sauce over the top and sprinkle with the remaining cheese.
- Bake for 20–25 minutes, until hot and bubbly.
- Serve with your favorite toppings like cilantro, avocado, diced tomatoes, or extra sour cream.
